CHANGES OF CARBOHYDRATES IN OLIVE SEEDS (OLEA EUROPAEA L.) DURING FRUIT MATURATION AND THEIR CORRELATION WITH GERMINATION

Abstract:
Soluble carboydrates were identified in Olea europaea L. (cv. Moraiolo) seeds, during the advanced fruit maturation (from the beginning of October to the end of December). The main soluble carboydrates in seeds extracts were ribose, glucose, sucrose, and inositol. The higher total carboydrate content (6 g/100 g dry weight) was detected on November 30 collected seeds. Sucrose content in the embryonic tissues strongly increased from the middle of November, reaching 1.55 g on December 20. Germination percentage appeared directly correlated with the total carboydrate content, while sucrose content was inversely correlated with the germination rate.
