Abstract:
This paper reports the results of a study carried out on hazelnut grown in Viterbo Area (Italy), to obtain hazelnut oil and partially defatted meal.
Hazelnut oil was extracted with a cold mechanical pressing.
Chemical-physical characterization of oil, examination of its thermal stability and some proposition of its industrial utilization were investigated.
We analyzed the chemical composition of meal, overall proteic fraction.
A proposal of industrial employment of the meal for the formulation of confectionery products is discussed.
