Abstract:
After a long stagnation period the organic farming is today expanding due to the demand for healthy and environment friendly products.
Most of the factors which slowed down its development are decreasing, since several distribution firms entered this market.
However the main obstacle remains high prices and low volumes.
This contribution gives an analysis of the entry of Monoprix on this market and refers it to the "conventions theory" on quality in the food sector.
