POSTHARVEST HANDLING OF SMOOTH CAYENNE PINEAPPLE IN HAWAII FOR THE FRESH FRUIT MARKET

Abstract:
Smooth Cayenne is the major variety used as fresh fruit. This variety is acid and more suited for canning, making a marginal fresh fruit when compared with a range of other possible varieties. The need is to select a variety that gives high yield, long storage life and more appealing flavor. Preharvest weather and fertilization can significantly influence fresh fruit acidity and sugars as well as susceptibility to chilling injury. Postharvest handling is designed to minimize injury and remove all fruit not suited for the fresh market. The major postharvest problems are disease and chilling injury. These are currently controlled by fungicide and waxing, respectively. The wax used coupled to the storage required can influence fruit quality, the loss during postharvest handling needs to be minimized to assure a high quality fresh fruit.
