The seed oil composition and localisation has been studied using three cultivated amaranth species: Amaranthus hypochondriacus (seed type), A.cruentus (seed and vegetable type) and A.hybridus (vegetable type).
Although there are small quantitative differences in seed oil components of the three species, the high degree of unsaturation is a general character due to the dominance of linoleic acid.
The histochemical detection shows, that seed oil is localized in the ring-like germ under the seed coat.
As a result of the easy mechanical separation of the germ, it is obtainable an oil rich seed fraction.
The importance of the unsaturated fatty acids cannot be overemphasized in the dietary management of heart diseases, amaranth species seem to be promising medicinal plants.
