Abstract:
The essential oil of ginger extracted by cold press processing was subjected to analyses by TLC GC, GC/FTIR and GC/MS. Besides the monoterpene and sesquiterpene compounds, the pungent principles of two homologous series, 6-, 8-, 10-shogaols and methyl-6-, methyl-8-, methyl-10-shogaols as well as zingerone were identified by the combined results of (1) gas chromatography, (2) thin layer chromatography, (3) gas chromatography/Fourier Transform Infrared spectroscopy and (4) gas chromatography/mass spectroscopy analyses.
These methods without isolation of ginger oil prior to analyses were different from that previously reported (Macleod et al., 1984, Massada, 1975, Chen et al., 1986, Lin et al., 1987). Furthermore, this is the first report of presence of gingerdione, dihydro-6-shogaol, dihydro-cis (trans)-methyl-8-shogaols and dihydro-methyl-10-shogaol in the essential oil of ginger.
