IS THERE ANY RELATIONSHIP BETWEEN THE FLESH MINERAL CONTENT AND THE PEEL HEXANE EXTRACTS OF APPLE FRUIT?

Abstract:
The mineral composition of apple fruit with or without scald is different and seems to indicate, as shown earlier by some authors, that calcium could prevent scald when potassium and magnesium could enhance it. For predicting the scald susceptibility it has been suggested that the antioxidant activity of hexane extract of apple peel (evaluated by OD at 200 nm) should be a good tool. Starting from this hypothesis apple peel disks (cv. Jonagold) were extracted with pure hexane and the results compared with mineral concentrations. Preliminary results showed that some correlations between these parameters could be found but they were sometimes expected (for instance more calcium = less conjugated trienes, more potassium or magnesium = more conjugated trienes) sometimes unexpected (for instance more calcium = less antioxidant activity). At this moment no explanation of this contradiction could be given.
