WOUND-INDUCED PHENOLIC METABOLISM IN SCALES OF HIPPEASTRUM X HYBR. HORT.

Abstract:
The intensity of reddish colouration of Hippeastrum scale slices gradually increases during 4 days aging. Polyphenol oxidase and peroxidase activities are very low in scales of intact bulbs and gradually increase during the time of aging. The highest activity of polyphenol oxidase, using catechol and catechin as substrates, was found 2 days after slicing. Polyphenol oxidase activity, using tyrosine as substrate, was the highest 4 days after aging of scale slices.

Peroxidase activity, using guaicol and chlorogenic acid as substrates, greatly increased during aging with maximum activity 4 days after slicing.

We suggest that the great increase of polyphenol oxidase and peroxidase activities, which oxidize endogenous phenolic substances to quinones and then may polymerize to melanin-like substances, may be responsible for the intensive reddish colouration of Hippeastrum scale slices during aging.
