Abstract:
A model describing changes in internal quality of apples during storage was developed.
The model is based on time-series analyses of internal quality and sensory qualities for three storage conditions.
Analyses were made from 1983 to 1990 for the cultivars "Golden Delicious", "Jonagold", "Gloster" and "Idared", grown on the hills south of Dresden, Saxonia, Germany.
During commercial storage of apples, quality parameters changed.
From sensory perception for ripeness, juiciness, firmness, taste and overall preference, limits for analytical data such as acid, sugar and firmness were derived.
The computer model enables prediction of possible storage duration and eating quality from the usual quality analysis at the beginning of storage.
A second regression model with gliding coefficients predicts weight loss with one determination during the first weeks of storage, after stabilising the storage conditions.
