Abstract:
This study demonstrates clearly that firstly the colour of Golden delicious apples can be measured using digitized video images, secondly the apples can be ordered based on the CIE-colour information and thirdly this order relation is similar with colour ranking by a test panel.
Principal components analysis on Lab colour coordinates was carried out to calculate the axis of principal colour differences.
The same approach was followed for colour measurements, based on classical; spectrophotometric reflectance curves.
The results from the digitized video images agreed well with the spectrophotometric results.
