APPLICATION OF EPIFLUORESCENT TECHNIQUE FOR THE DETERMINATION OF MOULD CONTAMINATION

Abstract:
For the detection of mould hyphae contamination of tomato concentrates, a fluorescent staining method has been elaborated. The fluorescent staining promotes the distinguishing of fungal hyphae in a more reliable and more rapid way.

By this method, yeast fungi and bacteria can be detected, as well. In case this method could be used for the analysis of raw materials and of samples taken during the supervision of processing, this would provide one of the most efficient methods for microbial control, due to the rapidity and minimal material demands of these kinds of assays.
