QUALITY CONTROL IN TOMATO PASTE

Abstract:
In order to know the quality of the tomato pastes manufactured in Mendoza, Argentina, and the possibilities of exporting them, 247 samples for domestic market and 140 samples for exportation were analysed. In agreement with Argentinian Food Law and other rules such as the Food and Drug Administration, Codex Alimentarius, United States Department of Agriculture, next following parameters were selected and studied: flavor, color, consistency, soluble solids, pH, acidity, Howard mould count, eggs and maggots flies count. In general, the result indicate that the manufactured products are in accordance to the requirements of the international quality requirements, it is necessary to improve the sanitary conditions of the raw material for disminishing the Howard mould count.
