Abstract:
The production of Italian peeled tomatoes was, until a few years ago, closely linked to the availability of raw material obtained from by San Marzano crops, typical of Naples and Salerno provinces.
This very special area has recently been interested in a widespread use of hybrid seeds, characterized by a high yield but of dubious qualitative standards and uncertain correspondence to the typical San Marzano features which the best production of peeled tomatoes has always been identified with.
This study presents the first result of a three-year research (1989–1991) the aim of which was to define the San Marzano features precisely and identify the differences between this type of tomato and the hybrids that have been gradually replacing it.
Thus, research was carried out specifically on the agronomical and physico-chemical aspects.
