FLOW PROPERTIES OF APRICOT PUREES AND CONCENTRATES

Abstract:
Flow properties of samples of apricot purees and concentrates were investigated with concentric cylinder viscometer. Flow behaviour was studied in the range of temperatures: O° – 60° C.

The sample power law model: tau = k x gamman where tau is shear stress is in N/m2, gamma is shear rate in s-1 k is consistency index in Nsn/m2 and n the flow index, described satisfactorily the flow data of apricot purees and concentrates.

Harper and EI Sahigi relationship:

BTa = alpha x cbeta x exp (Ea/RT)

was applied, where alpha and beta are constants and c is the concentration.

Such relationship can be used to model viscosity in engineering applications.
