Abstract:
The nutritional value of carrots is determined by the content of carotene, sugar, crude, fibre and possible detrimental substances such as nitrate. Little is known about the variability of these constituents. The influence of fertilization on the carotene and sugar content has been investigated several times, but the results are partly contradictory. The purpose of this investigation was to study the effects of nitrogen and potassium fertilization on the content of carotene, sugar, nitrate, and crude fibre.
