BIOCHEMICAL COMPOSITION OF TOMATO FRUITS DURING STORAGE

Abstract:
The biochemical composition of eight important tomato cultivars during twelve days of storage under room temperature was studied. Normal ripening was observed as indicated by physiological loss in weight, decrease in total juice per cent, chlorophyll content and acidity. There was increase in lycopene content, total soluble solids and reducing sugars per cent. The ascorbic acid content increased up to eight days but after that it started decreasing.
