Abstract:
Cv.Hayward kiwifruits were processed to obtain frozen kiwifruit slices and pulp using a cold line in order to maintain the organoleptic characteristics of original fruit.

Trials of peeling carried out in different ways (physical, chemical, and mechanical processes) were experimented in order to produce frozen slices. Product's yields in different technological steps and the principal analytical characteristics of pulp and slices were evaluated.
