ORGANIZATION, STRUCTURE AND TRADE IN THE NORTH AMERICAN TOMATO PROCESSING INDUSTRY

Abstract:
The North American tomato processing industry has undergone dynamic change in organization, structure and performance since 1972. The precipitating force of change has been consumer demand for highly prepared foods consumed at home, and for institutional foods consumed away from home. Total value for manufacturers' shipments of all tomato products exceeded $3,9 billion in 1987, with over 294 million cases produced. Economic concentration in the industry remains high, with 31 firms in the Western Region of the United States controlling 20 percent of all tomato processing factories and 56 percent of all manufacturing production. However, firms throughout North America have increased economic position thru implementation of regional product remanufacturing strategies and production of high value, less price sensitive consumer products. Tomato sauces now dominate production, accounting for over 35 percent of the total pack. Productivity has increased significantly throughout the industry. Value added output per production worker in the U.S. tomato processing industry has tripled since 1972. These trends will continue to enhance the competitive position of the entire North American tomato processing industry, and serve as the forerunners for new expansion opportunities.
