Abstract:
Fresh pineapple fruit from three different Chilean supermarket chains (Santiago city: 4.5 million inhabitants) were sampled during the peak time consumption.
Maturity index parameters analysed were: soluble solids, acidity, ss/acidity ratio, color, pH and pulp integrity.
Also physiological disorders were described and sensorial evaluations were conducted with trained panelist.
Although fruit had notorious deficiencies in quality mainly in its appearance, the evaluations showed acceptability of this type of fruit by the consumers.
