Abstract:
Physico-chemical parameters of postharvest ripened mangoes from Hawaii were examined.
The three cultivars examined were Pope, Fairchild and Haden.
Dramatic changes in ºBrix, titratable acidity, pigment content and firmness at different stages of ripeness were observed.
Cultivar differences were not that dramatic for ºBrix and titratable acidity as compared to pigment content and flesh firmness.
Sucrose was the major sugar in full-ripe and half-ripe mangoes whereas fructose content remained fairly constant at different stages of ripeness.
Citric acid was the major acid in mangoes and decreased rapidly with increase in maturity.
Cultivar differences on sucrose and citric acid were also observed.
