Abstract:
The ‘Carabao’ mango fruit exhibited softening and yellowing in the pulp before harvest maturity was attained.
Although ethylene production in this fruit remained low through the later stages of maturation a peak was observed about 10 days before harvest maturity.
During ripening the fully mature fruit exhibited two additional peaks: at color break and when the peel color was almost fully yellow.
Further examination of ethylene production revealed differences in patterns among the inner and outer portions of the mesocarp and the peel.
Results show that ethylene production and some changes associated with ripening occurred in the ‘Carabao’ mango prior to harvest.
