RIPENING OF GREEN-EATING-TYPE MANGOES, "MAMUANG MUN"

Abstract:
In Thailand a large volume of selected green mangoes is eaten as "mamuang mun" or delicious green mangoes. The fruit are slightly sweet blended with low acidity and crunchiness with varietal flavor. It is unusual to consume these fruit ripe. Different maturity of these mangoes were studied. Kheaw Sawoey, a leading delicious green mango exhibited two peaks of respiration which appeared to have two stages of ripening. Even though the fruit were less fully mature, the mangoes could be ripened containing over 18 % soluble solids and a maximum of 0.41 % titratable acidity with good eating quality and appearance. This type of fruit should obtain more attention as dual-purpose mangoes.
