Abstract:
Morphological, physical and biochemical characteristics of sapota (Manilkara achras (Mill) Forseberg cv.
Kalipatti) fruits were studied between 200 and 275 days after fruit set at 15 day intervals to assess the optimum stage of maturity.
Ripening behaviour, physico-chemical parameters and sensory features of the fruits were also studied.
Fruits harvested at 245 days (optimum maturity) possessed excellent chemical and sensory parameters.
These parameters with respect to the fruits harvested at later stages were comparable with optimum matured fruits, but the fruits deteriorated faster.
The fruits harvested prior to optimum maturity stage did not ripe properly and were not acceptable for consumption.
