Abstract:
Climatic conditions in November-December induce but very slow ripening of strawberries in protected culture with pale skin and white flesh coloured fruits.
Generally, when the fruits have a reached full pink colour, they are already overripe and then rot very quickly.
The present method, starting with white or lightly pink fruits, enhances bright red skin and flesh colouring within 2 days.
The fruits are then commercialized for restaurants or pastry industry.
