EFFECTS OF HOT WATER TREATMENT ON LIATRIS CORMS

Abstract:
Liatris corms were injured by exposure for 20 min or more to hot water treatment at temperatures above 50°C. The injury was related to loss of integrity of the cell membrane as shown by the increase in electrolyte leakage from the cells in proportion to the injury. However, phospholipid and protein contents of the membrane were not significantly affected by the hot water treatment. In contrast, the levels of thiol groups on the membrane proteins decreased sharply following the treatment. Hot water treatment thus appears to affect membrane integrity in liatris corms through modifications of the cell membrane proteins.
