POSTHARVEST HANDLING AND STORAGE OF BAMBOO SHOOTS (BAMBUSA OLDHAMI MUNRO)

Abstract:
After bamboo shoots were harvested, the fiber content increased quickly from the cut end toward the tip. The content of crude fiber of bamboo shoots could be lowered by keeping them at either high humidity or low temperature conditions or both during handling. A rapid increase of the activity of phenylalanine ammonia-lyase (PAL) and peroxidase (PO) were also found in the harvested bamboo shoot, while polyphenol oxidase (PPO) had no siginificant change. The enhance of PAL activity was closely correlated with the increase of crude fiber and lignin. The sharp rise of PAL activity of harvested bamboo shoots was partly due to the de novo synthesis of this enzyme as determined by Laurell's rocket immunoelectrophoresis.
