QUALITY DETERIORATION OF POSTHARVEST SWEET CORN

Abstract:
Traditional sugary (Rosella 425, Kulara II and Jubilee), supersweet (Sucro and Snosweet) and sugary extender (Aussie Gold 12) sweet corn cultivars stored at 1°C (T1), 4°C (T4), 7°C (T7) and 13°C (T13) for a period of 7 days were rated at regular intervals on a five point scale for sweetness and on a nine point hedonic scale for general acceptability (G.A.) by a trained analytical panel. The highest and lowest ratings for both sweetness and G.A. were usually recorded for the supersweet and traditional cultivars respectively; values for the sugary enhancer cultivar usually fell between the supersweet and traditional groups. G.A. of each sweet corn group decreased at a constant rate with time for a given temperature regime. The decline of G.A. against time tended to be greatest at higher storage temperatures (viz. T7 and T13).

Storage temperature had little effect on sweetness of the supersweet lines, although the perceived sweetness of both the sugary enhancer and traditional sugary cultivars decreased with time at T13.

Correlation coefficients showed that G.A. was significantly correlated with sweetness (r = 0.846, P <0.01).
