CHEMICAL AND BIOLOGICAL PARAMETERS OF SOME CULTIVARS OF CUCUMIS MELO

Abstract:
The carbohydrate and organic acid composition and aroma profiles of mature samples of thirty cultivars of Cucumis melo were determined and compared. No significant differences in carbohydrate and acid compositions were detected although the sugar:acid ratios covered a wide range of values. Some significant variations in aroma profiles were observed.

The skin structure of a number of cultivars was studied by light microscopy to investigate the relationship between this feature and storage behaviour.
