QUALITY OF RUSSET BURBANK POTATOES AS AFFECTED BY SET DENSITY

Abstract:
A series of experiments were designed to examine the effect of set density on Russet Burbank productivity and quality. Manipulation of set density has been reported to vary the occurrence of the defects second growth and greening. In the work reported here, the effect of set density on bruising, specific gravity, oil-cooked chip colour and boiled quality was also studied.

In four experiments it was found that six clones of Russet Burbank were similar and optimum marketable yields were obtained at 3–4 sets/m2. In a more extensive investigation using commercial clone, the optimum processing yield occurred at 4 sets/m2 whilst seed class yield increased up to 12 sets/m2. Cooking quality was similar at all densities and the specific gravity was also unaffected and exceeded the minimum of 1.070 acceptable to processors. Hollow heart was recorded in two experiments and affected 30% of tubers. It was unaffected by set density but was most serious in large tubers (>300 g).
