ISHS Acta Horticulturae 247: Research and Development Conference on Vegetables, the Market and the Producer

MARKETING MODEL SPECIFICATIONS FOR VEGETABLES IN THE CONVENIENCE FOOD INDUSTRY

Author:   C. Doepel
Abstract:
This organization has specific requirements for produce in the categories of salads, Burger garneshings, beans, potato chips and corn. Potato chips are purchased to specification, the contracts being for 7 500t annually. Coleslaw (1 700t annually) is likewise a product required to meet standard specifications. Minor vegetables, lettuce, corn-on-the-cob, 3-bean mix, pineapple, carrots, onion and boiling potato are less well specified in quality assurance terms but are required to meet company standards. Since most of the produce is not cooked before sale, the various lines are prepared in a centralised factory where temperature and hygiene are under strict control.
