NITRATE CONTENT AND OSMOTICALLY ACTIVE COMPONENTS IN LETTUCE (LACTUCA SATIVA L. VAR. CAPITATA L.) CULTIVARS

Authors:   U. Behr, H.-J. Wiebe
Abstract:
The experiment presented sought to explain the reasons for differences in the nitrate content of lettuce cultivars. The experiments were carried out on young plants as there is a close correlation between nitrate content of young plants and marketable lettuce heads. The 19 lettuce cultivars tested showed significant differences in nitrate content, whereas the osmotic values of the expressed plant sap varied only slightly. The nitrate content was negatively correlated with the concentration of glucose, fructose, chloride, and malate. In order to maintain osmotic pressure differences in nitrate content were compensated by the organic components (glucose, fructose, malate) and chloride.
