USE OF SOME WILD PLANTS AS VEGETABLES IN TURKEY

Abstract:
About 40 wild plants are used as vegetables in Turkey. Among these 12 are usually used in which two are localisated in East of the country (Eremurus spectabilis and Rhoeum ribes), one in Central Anatolia (Polygonum cognatum) and the others especially in Mediterranean and Egean regions (Asparagus acutifolius, Foeniculum vulgare, Cichorium inthybus, Taraxacum officinale, Malva sylvestris, Scolymus hispanicus, Sinapis alba and Sinapis arvensis, Urtica dioica).

In this paper, distribution, some botanic characteristics, nutritive value, using in cook of these plants as well as some studies for their culture (Polygonum cognatum, Foeniculum vulgare and Scolymus hispanicus) are presented.
