Abstract:
Storage studies in Malgoa and Malda varieties of mango were carried out.
Organoleptic evaluation, physiological and bio-chemical changes were studied, and correlated.
In fruits stored at ambient temperature, the proper development of sugar-acid blend and carotenoids was accounting for the highest organoleptic rating on tenth day.
The fruits could be stored upto 37th day at low temperature.
However, quality attributes, i.e., sugar-acid blend and carotenoids were adversely affected.
Organoleptic evaluation data was in confirmity with bio-chemical assessment.
Score for cold stored fruit was comparatively less than the fruits stored at ambient temperature.
