Abstract:
Confronted with intense competition (EEC, GATT, PCA), numerous "fruit and vegetables" activities are in difficulty.
The purpose of this research, by means of a test in South-France, is to analyse the maintenance and development conditions of these activities, their technical progress possibilities and any possible solutions.
Five "processed fruit and vegetables" systems (tomatoes, peaches, onions, plums and mushrooms) have been investigated by interdisciplinary teams (economics, processing technics, marketing, farming systems, genetics). This paper is intended to present the methods (combination of a system approach and a market structure analysis) and the main results -the location of "sensitive" points such as technological constraints impossible to bypass and their organizational and institutional implications, points of strength (e.g. varieties level) which permit the system to compete and points of regulation (e.g. interprofessional links) which strenghten the system- and the strategic weight of the EEC space (necessity of economic organizations within the EEC aera).
