1. Symptoms of breakdown

   During the storage of tomatoes different symptoms of breakdown may appear:

   • too low or too rapid colouring
   • softening of the fruits
   • moulds breakdown
   
   
2. Factors for storage

   To improve storage time we can take into account the following factors:

   • temperature
   • relative humidity
   • irradiation
   • CO₂ increase, O₂ decrease
   • chemical treatments
