SUGARS AND FLAVOUR SUBSTANCES OF TABLE GRAPE CULTIVARS DURING COLD STORAGE

Abstract:
Applying method of gas chromatography the investigation of content and change of some important sugars as well as the aromatic profile in grapes of table cultivars kept in cold storage was conducted. It has been determined that change of sugar content occurs in the function of cultivar characteristics, condition of storage and the intensity of biochemically-physiological processes. During cold storage and the conservation sugar content in grapes decreased, as well as composition of sugar, some kind being decreased, while other ones increased. The aromagrams were various according to cultivars and duration of conservation. Change of flavour in grapes during conservation was evident.
