STATE AND CHANGES OF ACIDITY SYSTEM IN GRAPE OF MANY GRAPE-VINE CULTIVARS DURING CONSERVATION IN COLD STORAGE

Abstract:
Using gas chromatographic methods contents of tartaric, malic, citric, succinic, quinic, shikimic and acetic acids in grape of several table grape cultivars after harvest and during conservation in cold storage has been investigated. Amino acids "chart" in grape of the same cultivars has been determined too. Investigated cultivars manifested significant differences concerning components of acidity system. This is function of the volume and intensity of dissimilation of sugars, biosynthesis, transformation and dissimilation of organic acids in the connection with its role in metabolism. The dependence among metabolism of organic acids acidity states, cultivars, conservation, duration and quality of products has been determined.
