Abstract:
It has been shown that CO2-injury of apples in storage is preceded by the increase in succinic acid in the tissue.
This might be due to an inhibition of the activity of succinate dehydrogenase by CO2.
In this paper the inhibitory effects of different CO2-levels on succinate dehydrogenase and other respiratory enzymes are studied.
It has been found that CA-storage not only inhibits succinate dehydrogenase but other enzymes as well.
Results are based on the turnover rates of labeled substrates added to apple tissue slices.
