STUDIES ON CALCIUM PENETRATION INTO APPLE FRUITS AFTER POST-HARVEST TREATING WITH CaC12

Abstract:
Ca applied as a post-harvest dipping moved steadily into the fruit flesh 4 weeks after the dipping. Warm apples (18°C) dipped in warm solution absorbed twice as much radioactive Ca in the skin in comparison to warm apples dipped in cold (2°C) solution, and 4 times more when compared to cold apples dipped in cold solution. The penetration of Ca from the skin into the flesh was greatest in the apples that were warm at the dipping time.

Addition of 1% of starch and 2.5 % of cornflour to 45CAC12 solution increased Ca penetration into internal layers of the flesh. Additions of 1 % pectins or albumem decreased Ca penetration into the skin as well as into the flesh.
