FIXED OIL CONTENT OF QUISQUALIS INDICA L. FRUIT AS AFFECTED BY STORAGE

Abstract:
Quisqualis indica L. fruits air dried to 8% moisture content were stored in clear bottles under ambient conditions to determine the effect of 1 year storage on the fixed oil content and other parameters like the presence of molds/insects, color changes and off flavor/odor.

Percent pure fixed oil, specific gravity and refractive index were not significantly different among treatments. Acid value of the control was significantly different from the one year stored fruits but not from the 6 months treatment. Six months and one year stored fruits were significantly different in acid values. The same pattern was observed with saponification and ester values.

The presence of molds and insects was negligible. Off flavor and off odor were insignificant during the storage duration. The color of the nut changed from light yellow to brown.

The above data indicate that one year storage duration does not significantly affect the physical constants of the fixed oil. Changes in chemical constants began at the 6-month storage treatment but were not expressed in terms of off flavor/odor.
