Abstract:
In the past Chinese cabbage was little known in Germany.
It has been only in the recent 20 years that the consumption has been continuously increasing.
Per head consumption in the 1979/1980 season was as high as 1.4 kg.
The growing area has been stronger increasing in the recent years than the consumption.
The results are distinctly longer marketing times for the harvested product.
Consumers and producers hence are equally interested in a possibly long selling period for Chinese cabbage which is feasible only by means of cold storage.
The quality of Chinese cabbage offered in the market usually decreases noteably from late January on.
From mid February on, Chinese cabbage in satisfactory quality is scarcely available any more, and if so, only at strongly elevated prices.
Only little practical experiences have been available so far in the Federal Republic of Germany on the storage behaviour of Chinese cabbage and particularly of the individual varieties (2, 3, 4, 5 and 6). During recent years, losses of 50–60% were recorded in the cold-stored vegetables in early February.
These figures were the basis for our storage tests on Chinese cabbage which shall be reported upon in the following.
Our studies were to show ways of how to improve the quality preservation in practice, to reduce storage losses and particularly to extend the period during which Chinese cabbage can be offered in the market.
Our study was made during the season of 1979/1980. The vegetable was harvested between November 6 and 11, 1979.
