RELATIONS BETWEEN THE CHEMICAL COMPOSITION, MOULDS INFECTION AND FREEZING INJURY OF LEEK

Abstract:
The resistance to moulds or freezing injury varies in a considerable amount by climatical circumstances, variety, pathological infections and physical damage.

The storage time shows mean ranges at 0 to 1°C between 3 to 4 weeks and at 2 to 5°C between 2 to 3 weeks (Sprenger Institute, Wageningen).

The chemical composition of the leek gives indications about the sensibility for moulds infection and for freezing injury.
